The objective of this project is the practical application Of Internet Of Things (IOT) and Artificial Intelligence methodologies in order to improve carcass coding and its related challenges in the meat industry. Effective carcass cooling can have a significant impact on the economic state of the industry in a number of areas, including carcass shrink, associated product detects both process and sensory related, bacteria growth affecting shelf-life and food safety factors.
