Description:
The objective of this project is to develop a clean-label preservative by extracting a natural fibre from white button mushrooms. This natural preservative improves the quality, freshness and shelf-life of various food and beverage products (e.g., juice, yoghurt, dips) thereby reducing food waste through upcycling mushroom stems that would otherwise be wasted.
