Description:
This project aims to determine the optimum conditions (without overly modifying the existing production chain) for implementing an innovative antimicrobial solution against Listeria monocytogenes in high-turnover agri-food plants. In addition, the results of this research could transform preservation methods in the agri-food industry, offering innovative and effective solutions in the form of antimicrobial solution combinations. We will contribute to reducing public health risks and improving the quality of products available on the market.

Expected Results:
The project involves the spray application of Pédiocine PA-1-M31L (INNEO), a natural antimicrobial agent, to combat Listeria monocytogenes, a food pathogen. This innovative method helps prevent contamination of vegetables and meats, especially after the food recalls of 2023 and 2024. The application will be developed in partnership with major players in the food industry. At the same time, they will finalize the maturation of a technology against E.coli.
