Description:
Funds will be used to purchase and install the equipment in the new community freezer necessary to process turbot and char according to Canadian Food Inspection Agency (CFIA) standards, hire a specialist to assist with the set up of the processing space and equipment, provide 30 days of training in Advanced Food Safety, assist with establishing written protocols and operational procedures, train the local workforce in Basic Food Safety, teach hazard analysis and critical control points (Haccp), and show them the skillset for primary processing of turbot and char.

Expected Results:
As a result of this project, the Municipality will have workspace and a trained workforce capable of processing to CFIA standards for commercial sale of fish, the 50MT turbot quota that has been assigned to the Hunters and Trappers Association.
