Description:
The Green Youth has MsC in Food Science, with a specialty in food chemistry. The project focus is to identify a suitable oil substitute for coconut oil in the firm's non-dairy ice cream. The oils considered will be local and sustainably grown - two such oils being Camelina and Tigernut oil. These oils are sustainable, locally grown and organic. The Green Youth would lead scientific research and collect the data through formulating the ice-cream base with the different oils in order to create a similar formulation to our current proprietary blend, making a more sustainable product with less food kilometres and negative environmental impacts.
