This project will allow the Firm to design and develop a process to drastically reduce produce waste by generating sustainable, long shelf-life, plant-based functional foods from near end of shelf-life produce that may otherwise end up in a landfill. The Firm's efforts will create a sustainable model upon which food waste will be significantly reduced.
