The Youth will work with Chinova's expert microbiologists to apply mushroom chitosan preservative formulations to food and beverage models which are technically challenging due to certain properties of the food or beverage. The youth will find methods to test the models for antimicrobial performance of the mushroom chitosan preservative and undertake the tests.
