Cheese Beans is a Cheddar cheese and a local cheese of Quebec characterized by its specific texture and taste but whose conservation is limited to 24 hours without refrigeration, which requires the addition of high amounts of salt to avoid deterioration the quality of the product. The project aims to develop a new method of stabilizing grain cheese while providing added nutritional value.
