This project has two sides. One is a culinary side seeking to finalize the integration of local sustainable ingredients like kakai pumpkin seeds, and organic maize or green roof products into scalable food safe HACCP production standards. The second is the documentation and improvement of HACCP standard processing techniques and technologies that prepare the materia prima for HACCP certified scalable production.
