Description:
The polycyclic aromatic hydrocarbons (PAH) levels in food including smoked fish are part of new import regulations adopted by the EU. To be able to meet these regulations changes to the current smoking process will be required. Currently the only method to determine product quality is to measure the PAH levels after 5 weeks of smoking. This project’s main goal will be to develop a method to test the PAH content during production.
