Maia Farms, in partnership with the NRC, is pioneering a cutting-edge process to produce mushroom protein, derived from the root structure of fungi. They are aiming to cultivate an optimal fungal species and scale the process from a 1-liter flask to a 1000-liter scale. Alongside production, the team is committed to testing the nutritional and sensory attributes of the mushroom protein such as taste, texture, color, etc. Their goal is to deliver industry-standard mushroom protein, earning positive feedback from our customers, Big Mountain Foods and TMRW Foods. Ultimately, the team is determined to see mushroom protein integrated into everyday food products, marking a significant leap toward a more sustainable protein source. This project symbolizes the pursuit of ground-breaking sustainable solutions for the future of food. Overall, the goal of the project is to advance protein production for a healthier and more sustainable future for all Canadians.
