Description:
The project involves development of a special grade Akawi cheese that has never been made in Canada. With the increased demand on baked products containing cheese from the new Canadians descending from Middle East and Mediterranean region, in addition to the increased awareness and popularity of the Mediterranean diet and lifestyle for Canadians from all walks, the demand on baked Mediterranean products (both savoury and sweets) has created tremendous demand on products similar to Czech Akawi. There are couple Canadian producers of Akawi including Chinook Cheese but non of them has the required characteristics of Czech Akawi. The main differentiation is that Czech Akawi is melting cheese that makes it ideal for several kinds of bakes.
