Alooki Technology is developing an advanced AI/ML-based inspection system to automatically detect quality and safety defects in white fish fillets, such as nematodes, blood spots, and bones. Designed for real-time operation on high-speed processing lines, the system will improve food safety, reduce product waste, and support automation across seafood production. The solution is adaptable to both cod and pollock and aims to strengthen the competitiveness of Canadian seafood processors through innovative, non-invasive quality control.
