Description:
Bacterial contamination in commercial ethanol fermentations can decrease ethanol yield and negatively impact the economics of ethanol production. Currently, antibiotics are used to prevent bacterial infections in ethanol fermentations, which is costly and can lead to the emergence of antibiotic-resistant bacteria. Our goal is to develop a method for producing an antibacterial yeast strain that can be used in ethanol fermentations without the addition of antibiotics.
