Description:
The development and scale-up of brewers spent grain pancake mix for commercial sale. The low gluten and dehydrating requirements increase the complexity of creating a pancake mix with Brewers Spent Grain. The creation of the mix is step one while the scale-up for production on large scale is step two. There is also a requirement for the determination of the required moisture content of the flour. The current moisture of the flour is very dry, this complicates recipe development as there is a need for additional moisture to be added to the mix and creates inconsistency in the mixing.
