Program Purpose:
The current proposal intends to study clean label alternatives for the control of Listeria monocytogenes in a fishx000D
product, smoked salmon jerky. The Listeria presence in recent smoked salmon recalls in Canada led Wolfheadx000D
Smokers to investigate natural alternatives to control Listeria. The company smokes farm-raised Atlanticx000D
salmon, which is harvested from the cold, pristine waters of the Bay of Fundy; and is shipped across Northx000D
America and around the world.
