Program Purpose:
This projects aims to remove or decolourize pigments found in the edible sea plant Mazzaella Japonica usingx000D
extraction or treatments with generally regarded as safe (GRAS) chemicals acceptable in treatment ofx000D
foodstuffs for human consumption. Extraction with selected non-aqueous solvents or aqueous solventsx000D
containing a range of acceptable salts, mild oxidants and reductants or variable pH will be explored. The goalx000D
is to develop a reliable process that yields pale pink or green Mazzaella Japonica tips while maintaining thex000D
desirable texture and taste of the plant.
