Program Purpose:

Freson Market Ltd. differentiates itself in the retail market by focusing on in-house production of quality meat, deli and bakery products. A key component of future growth plans of the business is the revamp of its in-store smokehouse program and the development of a charcuterie program to be launched in conjunction with the opening of a new retail location in Fort Saskatchewan in the spring of 2018. The purpose of this project is to: (i) develop processes for smoking and fermenting that are appropriate to Freson's operating environment; (ii) research the effect of material inputs, recipe formulation and key processing parameters on end product quality and safety; and (iii) undertake product reformulation with a focus on achieving "clean labels". For the company, this project represents an important opportunity to develop new value-added production capabilities.
